Biscuit Pocket Sandwiches

Ingredients

1 can Pillsbury Grands Southern Style Biscuits

REUBEN FILLING

1 cup canned corned beef diced

1/2 cup swiss cheese shredded

1/2 cup sauerkraut

1/2 cup thousand island salad dressing

BARBECUE FILLING

2 cups cooked pork or beef shredded

barbecue sauce

CAJUN FILLING

1 cup smoked sausage diced

1 cup ricotta cheese

1/4 cup scallions sliced

1/2 teaspoon thyme

1/8 teaspoon crushed red pepper

Directions

Separate 8 biscuits. Press each to flatten into a 5" round. Place 4 rounds on a cookie sheet sprayed with Pam. Top each with about 1/2 cup filling. Brush edges with water, then top each with another round. Press edges with tines of a fork to seal. Bake at 375 degrees for 12 to 18 minutes until golden.
Cut in half to make 8 servings.
